A worker is shown operating a compressor for the processing of starch at the Worthington Foods plant on Proprietor's Road. Starch is a by-product from the process of producing no-meat protein foods. In the early days of Worthington Foods water was run over batches of dough to reduce the starch and develop the gluten. When Bernath (B.J.) Knecht, joined the company as Chief Engineer he had concerns about the waste of starch during this process. He suggested that they sell this by-product and the company began to bottle and sell the starch under its own label. Eventually the starch was sold to the Keever Starch Company in Columbus.
